  1. Campfire baked potatoes

If you are wild & free at heart and love going off grid with your Campervan, cooking doesn’t need to become a chore or complicated. With this super simple recipe, you’ll have more time to sit back, gaze at the shining stars up above and make new friends around the campfire. All you’ll need is below –

Ingredients for 2 people: x2 Baking potatoes, Can of baked beans, Butter, Cheese and tin foil.

Prepping & cooking time: 30-60mins

Method:

  1. Once your campfire is up and running, pierce each potato with a fork several times and wrap it in the tin foil.
  2. Place your wrapped potatoes at the edge of the fire and NOT directly on the flames itself.
  3. Turn the potatoes a couple of times and allow them to cook for 30-60mins depending on the size of your potato/heat from your fire
  4. Re-pierce the fork into the potato to ensure its cooked all the way through
  5. Heat your baked beans over your gas hob
  6. Serve the potato with butter, beans and/or cheese and any leftovers you may have in the fridge

 

 

  1. Veggie Chilli

 If you’re exploring in the Great British weather, let’s face it, it can be very cold and wet at times. A great pick me up in the evening is a nice hot plate of food, you can’t go wrong this a chilli. Home cooked food doesn’t need to be tricky, but it does need to be tasty, and this Veggie Chilli hits all the spots!

Ingredients for two people: 2 large Carrots, 4 cloves of garlic, 1 white onion, 1 chilli, 2 teaspoons of cumin, 1 yellow pepper, 1 can of Kidney beans, 1 can of chopped tomatoes, 2 tablespoons of tomato puree, salt & pepper.

Prepping & cooking time: 30-40mins

Method:

  1. Peel and grate the carrots, dice the onion & pepper, finely mince/slice the garlic and chilli
  2. Fry the onion, garlic and chilli on your gas hob and add the cumin for a couple of minutes
  3. Add the carrot and pepper and fry until soft
  4. Add the remaining ingredients and leave to cook for around 20mintues
  5. Serve with rice and there you have it your veggie chilli is ready!

 

 

  1. Family breakfast

 You’re enjoying your beautiful family holiday at your campsite, there’s plenty of mouths to feed and you’ve got a whole day ahead planned of fun activities, you need something easy enough to fuel you and your family for the day ahead. Any ideas? I’ve got one, it’s the Smokey Bean Breakfast…. It defiantly will be a crowd pleaser and you’ll have enough for leftovers to snack on for the day too!

Ingredients for 6-8 people: 4 tablespoons of olive oil, 6 chipolatas, 1 Spanish chorizo sliced, 6 great quality hot dog sausages cut into large chunks, 2 white onions chopped, 500ml carton passata, 300g BBQ sauce, 2 x 400g borlotti beans drained, 2 x 400g baked beans drained, 8-10 eggs and toast to serve.

Prepping & cooking time: 40mins

Method:

  1. Heat the oil in a large paella pan and place over the two hob rings.
  2. Add the chipolatas and brown all over, push to one side of the pan and add the hot dog sausages and chorizo into the pan. Cook for a few minutes until you can see the chorizo release some of its oil, then push these aside along with the chipolatas.
  3. Add the onions and cook until soft, normally takes around 6-8mintues
  4. Next add the passata, BBQ sauce and season with salt & pepper. Bring all the ingredients to a simmer for a few minutes then stir all the beans and bring everything back to a bubble.
  5. Using the back of the spoon, create small spaces in the beans and crack the eggs dotting them all over. Cover the pan and gently cook for 10mins.
  6. Serve with buttered toast, orange juice or a cuppa tea. Delicious!

 

 

  1. Hot chocolate

 Whether you’re winding down before bed, needing a little treat or needing warming up this hot chocolate recipe will do the trick!

 Ingredients for 4 people: 600ml Milk, 142ml pot of double cream, 100g Chopped up chocolate and marshmallows to decorate onto the top

Prepping and cooking time: 7mins

Method:

  1. Pour the milk, cream and chopped chocolate into a pan
  2. Bring to a gentle boil and regularly stir until smooth
  3. Serve into individual mugs and add as much marshmallows as you like and for an extra treat sprinkle grated chocolate over and enjoy

 

 

  1. BBQ S’mores

 A tasty American campfire tradition, s’mores are cheap and easy but wow do they taste amazing! Not tried them before, you don’t know what you’ve been missing out on! Give them a go next time you’re on your travels you won’t regret it!

Prepping & cooking time: 5 minutes if that!

Ingredients for 4 people: 400g of your favourite biscuit or cookie, 400g of milk chocolate and 300g of large marshmallows

Method:

  1. Wedge the chocolate between two biscuits/cookies
  2. Toast your marshmallow over the BBQ
  3. Once toasted/gooey enough for your liking, place in the middle of your s’mores sandwich. Yep, that’s its! As simple as 1,2,3!

 

 

  1. Omelette

Don’t want to be in the kitchen too long or not confident with cooking? Then we have the recipe for you, only needing a handful of ingredients and a pan you’ll have more time relaxing and taking in the beautiful surroundings wherever you are!

Prepping & cooking time: 6mins

Ingredients for 1 person: 3 eggs, 1 tsp butter and a filling of your choice i.e cheese, bacon etc.

Method:

  1. Melt a dollop of butter in the pan, beat the eggs and pour in with the melted butter
  2. When the mixture starts to firm up, add your filling of choice and fold over in half with a spatula
  3. Cook until brown and simply slide onto your plate

And just like that you have a super easy dinner!

 

 

  1. Super easy pasta

 This dish is ideal for cooking in big batches, so that’s tomorrow’s lunch sorted too! This dinner is quick, simple and requires very few ingredients giving you more space in your cupboards!

Prepping & Cooking time: 10mins

Ingredients for 4 people: 300g pasta of your choice, 400g chopping tomatoes, 1 tbsp tomato puree, ½ crumbled vegetable stock cube & a good handful of basil

Method:

  1. Cook the pasta in a saucepan in boiling water until the pasta is just starting to soften and drain
  2. Add the chopped tomatoes, tomato puree and crumble the vegetable stock over and stir. Allow 5mins all to cook together
  3. Once the pasta has fully cooked, tear the basil and sprinkle over the pasta and serve. Why don’t you treat yourself to a cold glass of white wine alongside, now we’re talking!

 

 

  1. Summer pudding trifles

Nothing says luxury camping than a lovely dessert! Watch out though, you may get some jealous campers starring at you with these fresh summer trifles!

Prepping time & arranging time: 5mintues

Ingredients for 4 people: 600g raspberries, 50g golden caster sugar, 1 madeira loaf (300g), 227ml tub of clotted cream.

Method:

  1. Pour 300g of raspberries in a bowl, roughly mash them with the sugar
  2. Cut the Madeira loaf into 12 slices, using a glass cut out the circles
  3. Beat the clotted cream until it starts to thicken
  4. Layer up the trifle into the glasses starting with slice of cake, cream, raspberries until the glass is full.

The great thing about this dessert is you’re able to make them before you travel as it will keep fresh in your fridge for a couple of hours! Perfection!
